LaChance publishing is a non-fiction publisher that publishes books about health topics and fitness. Their “Voices Of” series of anthologies is seeking 500-3,000 word personal essays on the following topics:
Alzheimer’s Disease
Anorexia/Bulimia
Breast Cancer
Depression
Epilepsy
They are also seeking stories about dogs who’ve made a difference in people’s lives. From the website:

“Following on the success of Good Dogs Doing Good, we’re planning a second volume of uplifting, true stories of dogs that have transformed people’s lives.
What we need: True stories of literary merit that show the real, positive and transformative impact a dog has had in your life or the lives of your family or loved ones. For example, has a dog aided you through an illness or given you new insights on yourself or your life? Good Dogs Doing Good itself is the best reference. Your story should be 500-3,000 words.
What we do NOT need: Stories that focus primarily on a dog’s adorable characteristics.”

Sexology: An Online Literary Journal of Sex Writing is seeking submissions for
its inaugural issue, which we’re hoping will be mid-May 2010.
We are looking for the highest quality fiction, personal essays, and poetry that
explores what sex means in our culture and on a personal level. This is not the
same as erotica, which can be defined as literature or art intending to arouse
sexual feelings. Sex writing may or may not have actual sex in its pages
(although it usually does, and it will often overlap with erotica in that it can
be arousing). Please no pornography (sex for sex’s sake), romance, or
journalistic articles.
Pieces should be no more than 2000 words.
Contributors are paid in gratitude and admiration.

Cerise Press is open to submissions in photography, art, fiction and poetry, including translations in French, Chinese, and Spanish. (For other languages, kindly inquire first.)
We publish 3 issues per year.
Submissions are read year-round. All work accepted will be considered for our future print anthologies. We accept unpublished pieces, and on very rare occasions, previously published ones.
We read and consider each submission with care and integrity. Although it may take up to 2-3 months for us to reach an editorial decision, we’ll do our best to respond promptly to submissions and to general correspondence. After 3 months, please feel free to query.
Submissions
Include a cover letter with a brief biographical note, listing any recent publications you may want to mention, your name and contact information.
Submit 3-5 poems as a .doc or .pdf.
Submit 1 story (1-15 pages) as a .doc or .pdf
Submit 4-6 photographs and/or 2-5 works of art as .jpegs.
Please indicate any additional links/gallery websites for our reference.
Translations should be accompanied with the original texts, brief biographical notes for the author(s) and the translator(s) , and a statement of the author’s or literary agent’s permission and approval.
